Ingredients

  • 1 medium head cauliflower
  • 1 tsp curry powder
  • kosher salt and pepper to taste
  • ½ cup nonfat Greek yogurt
  • 2 tbsp chopped fresh mint
  • ½ tsp sugar
  • ½ tsp lemon zest
  • 1 ½ tbsp olive oil
  • cooking spray
  • 15 oz can chickpeas

Instructions

    Preheat your oven to 425 degrees Fahrenheit. Prepare a baking sheet by lining it with aluminum foil and applying a light coat of cooking spray.

    In a spacious mixing bowl, combine cauliflower florets, rinsed chickpeas, olive oil, curry powder, salt, and pepper. Mix well and then arrange the mixture evenly on the prepared baking sheet.

    Place the baking sheet in the preheated oven and roast for 30 minutes, making sure to stir the mixture halfway through the cooking time, until the cauliflower and chickpeas are beautifully golden brown.

    While the vegetables are roasting, prepare the yogurt sauce by mixing together yogurt, chopped mint, sugar, and lemon zest in a bowl. Season with kosher salt and pepper to your liking.

    For plating, spoon the minted yogurt onto the bottom of each plate, then generously layer the roasted cauliflower and chickpeas on top.
