Ingredients

  • 1 tablespoon extra virgin oil
  • 2 large Vidalia Onions
  • olive oil spray
  • 2 pounds green beans
  • kosher salt and black pepper to taste

Instructions

    Begin by setting your oven temperature to 425°F (220°C) to preheat.

    In a large nonstick skillet, warm up the oil over medium-high heat. Introduce the onions, seasoning them with 1/4 teaspoon of salt and a sprinkle of black pepper.

    Sauté the onions, stirring frequently, until they start to develop a brown color, which should take around 10 minutes. Then, lower the heat to medium-low and continue to cook, stirring occasionally, until the onions are rich and golden brown and have softened, approximately 30 minutes.

    In the meantime, arrange the green beans on a baking sheet and mist them generously with olive oil spray. Season with 1/2 teaspoon of salt and add black pepper to your liking.

    Roast in the oven until they are tender yet still crisp, which should take about 16 to 18 minutes, flipping them halfway through the cooking time.

    Once done, transfer the green beans to a serving platter and generously top them with the caramelized onions. Serve while hot.
