Begin by heating your oven to 400 degrees F. Lightly coat 2 baking sheets with olive oil spray.
Evenly distribute the mushrooms across the two prepared baking sheets.
Drizzle 1 tablespoon of olive oil over each sheet, then sprinkle with ¼ teaspoon kosher salt, black pepper, and half of the fresh thyme. Toss the mushrooms to ensure they are well-coated, then arrange them in a single layer.
Place the mushrooms in the oven and roast for 20 minutes, stirring and rotating the sheets halfway through the cooking time.
Once done, sprinkle with Parmesan cheese, add a splash of balsamic vinegar, and finish with additional fresh thyme for garnish.
