Begin by setting your oven temperature to 425 degrees Fahrenheit.
In a spacious mixing bowl, mix together the carrots, 2 teaspoons of olive oil, salt, pepper, and ginger. Ensure that the carrots are thoroughly coated by tossing everything well. Arrange the carrots on a baking sheet lined with parchment paper and roast them for 30 to 35 minutes, or until they are tender and caramelized, remembering to stir them once halfway through the cooking time.
Once roasted, drizzle the remaining teaspoon of olive oil over the carrots, add the cilantro, and gently toss everything together before serving.
