Ingredients

  • 1 lemon
  • 1 clove garlic
  • 7 cups roughly chopped or torn romaine
  • 4 wild skin-on salmon fillets
  • 3 anchovy fillets
  • 1/4 cup finely grated Parmesan cheese
  • 1/4 cup mayonnaise

Instructions

  1. 1

Extract juice from one half of the lemon, measuring out 1 tablespoon, and combine it in a spacious mixing bowl with the crushed garlic clove, anchovy fillets, parmesan cheese, and mayonnaise.

  2. 2

Allow the mixture to rest so the flavors can blend harmoniously.

  3. 3

Lightly season the salmon with a sprinkle of salt and freshly ground black pepper, adjusting to your preference.

  4. 4

Warm a large skillet over medium-high heat and lay the salmon in the pan with the skin side facing down.

  5. 5

Cover the skillet and let it cook undisturbed for 5 minutes, or until the skin achieves a golden-brown color. Carefully turn the salmon over and continue cooking for another 2 minutes, adjusting based on thickness, until fully cooked.

  6. 6

Drizzle the remaining lemon juice over the cooked salmon.

  7. 7

Incorporate the lettuce into the bowl with the dressing, and toss thoroughly until every leaf is evenly coated.

  8. 8

Share the dressed lettuce between serving plates and place a piece of salmon on top of each portion.
