Ingredients

  • 8 ounces sweet chicken Italian Sausage
  • ½ small onion
  • 1 carrot
  • 2 cloves garlic
  • 32 ounce container unsalted chicken bone broth
  • 1 ½ cups water
  • 1 small Parmigiano Reggiano Rind
  • ½ tablespoon Chicken Better than Bouillon
  • ¼ teaspoon fresh black pepper
  • 9 ounces three cheese tortellini
  • 1 cup baby spinach
  • Parmigiano Reggiano
  • 1 stalk celery

Instructions

    In a large pot, warm over medium-low heat and add the sausage. Cook while breaking it apart with a spoon until fully browned, which should take about 5 minutes. Then, incorporate the celery, onion, carrot, and garlic. Sauté for 8 to 10 minutes until the vegetables start to tenderize.

    Pour in the chicken broth and water, and if you have it, toss in the parmesan cheese rind. Raise the heat to medium-high and bring the mixture to a rolling boil.

    Once the broth reaches a boil, mix in the Bouillon and black pepper. Stir well to blend, then cover the pot and let it simmer on medium-low heat for 15 to 20 minutes, or until the vegetables are tender.

    Lower the heat to the minimum setting and add the tortellini and spinach. Allow it to simmer until the tortellini is cooked al dente, following the package instructions, which should take about 5 to 6 minutes. Afterward, be sure to take out the cheese rind.

    Stir everything together for a complete mix and serve with freshly grated Parmigiano Reggiano on top, if desired!

Notes & Tips

  • *If you use chicken broth with salt, omit the the Better Than Bouillon.
  • I found the soup needed 1/2 tablespoon of Better Than Bouillon, but if you want to lower the sodium you can omit it.
