Ingredients

  • Freshly ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 teaspoons chopped fresh thyme
  • ¼ cup freshly grated Parmesan cheese
  • Nonfat Greek yogurt for serving
  • ¾ teaspoon kosher salt

Instructions

    Lightly coat a baking sheet with olive oil and set your oven temperature to 425 degrees Fahrenheit.

    Rinse and pat dry the sweet potatoes, then slice them into rounds approximately ¾-inch thick.

    In a sizable mixing bowl, blend melted butter with salt, pepper, garlic powder, and thyme. Add the sweet potato slices and toss them until they are thoroughly coated.

    Arrange the sweet potato slices in a single layer on the oiled baking sheet. Roast in the oven for 25 minutes or until they are tender when pierced with a fork. Once done, take them out and let them rest for 5 minutes.

    Move the oven rack to the second position from the top and switch your oven to the high broil setting.

    Using a fork, carefully press down on each slice to smash them gently.

    Lightly mist the smashed potatoes with olive oil and sprinkle Parmesan cheese over each slice. Then, place them back on the upper middle rack of the oven.
