  • 20 oz baby red potatoes
  • 1 small onion
  • fresh cracked black pepper
  • 1- 1/4 teaspoon kosher salt
  • 1- 1/2 tbsp extra virgin olive oil
  • 1 green bell pepper
  • 2 carrots

    Begin by heating your oven to 375°F. Prepare a sheet pan by lining it with nonstick aluminum foil or giving it a light coating of cooking spray.

    In a spacious mixing bowl, mix together all the ingredients thoroughly. Once combined, pour the mixture onto the prepared sheet pan and arrange it in an even layer. Place it on the bottom rack of the oven and let it roast for 15 minutes. After that, give them a turn and continue roasting for an additional 25 to 30 minutes, or until they are beautifully golden brown and tender throughout.
