While shrimp cocktail is a classic choice, when I’m in the mood for something extraordinary, I prefer my shrimp prepared in a vibrant ceviche with a burst of lime!

Ingredients

  • 1/4 cup chopped red onion
  • 1 lb large cooked, peeled shrimp
  • 1 medium hass avocado
  • 1 medium tomato
  • 1 cup diced English cucumber
  • 1 serrano pepper
  • 2 tbsp chopped cilantro
  • salt and fresh black pepper to taste
  • 1 lime cut into wedges for serving
  • 2 1/4 cups shredded iceberg lettuce
  • 2 small limes
  • 1 tsp olive oil

Instructions

    In a small mixing bowl, blend together the red onion, lime juice, olive oil, and a dash of salt and pepper.

    Allow the mixture to sit for a minimum of 5 minutes to soften the taste of the onion.

    In a larger bowl, mix the shrimp, avocado, diced tomato, cucumber, and serrano pepper.

    Fold in all the components, adding cilantro, and toss gently to combine.

    Taste and adjust the seasoning with additional salt and pepper as needed.

    Line the bottoms of nine martini glasses with a bed of shredded lettuce.

    Spoon 1/2 cup of the shrimp salad onto each glass and finish with a sprig of cilantro on top.

    Present each serving with a lime wedge on the side.
