Ingredients

  • 1 tablespoon olive oil
  • cup kalamata olives
  • 1 ¼ lb jumbo shrimp
  • 1 lemon
  • ¼ cup fresh dill
  • 6 ounces feta cheese
  • 2 cups cherry tomatoes
  • 3 cloves garlic
  • ¼ cup shallot

Instructions

  1. 1

In a deep skillet, warm up some olive oil. Toss in the shallot and garlic, sautéing them until they release their fragrance, which should take around 2 to 3 minutes.

  2. 2

Introduce the cherry tomatoes to the skillet and cook them until they start to burst, stirring frequently; this should take about 5 to 6 minutes. Next, mix in the olives and ¾ cup of water; give it a good stir, then lower the heat to medium-low and let it simmer until the mixture becomes saucy and thick, roughly 2 to 3 minutes.

  3. 3

Gently place the shrimp into the tomato mixture, cover the skillet, and cook until the shrimp turn pink, which will take approximately 3 minutes.

  4. 4

Incorporate the lemon zest, lemon juice, and dill into the dish, then sprinkle the top with feta cheese.
