Ingredients

  • 5 ounces uncooked orzo pasta
  • kosher salt and fresh pepper to taste
  • 1 tablespoon unsalted butter
  • 1 teaspoon extra-virgin olive oil
  • 2 garlic cloves
  • 1 pound peeled and deveined jumbo shrimp
  • 1/4 teaspoon kosher salt
  • Freshly ground black pepper
  • Pinch red pepper flakes
  • Juice from 1 lemon
  • 1 tablespoon fresh chopped parsley
  • grated parmesan cheese
  • 3 cups of roughly chopped fresh broccoli florets only
  • 1 tablespoon extra virgin olive oil
  • 3 cloves garlic

Instructions

    In a medium-sized pot, bring water seasoned with salt to a rolling boil. Once boiling, add the orzo and broccoli, cooking them according to the instructions on the package until they reach an al dente texture. Before draining, set aside approximately 1/2 cup of the cooking liquid.

    After draining the orzo and broccoli in a colander, return them to the pot and drizzle in the oil while heating over medium heat.

    Introduce the minced garlic to the pot and sauté until it turns a golden brown, which should take about 30 seconds. Then, add the drained orzo and broccoli back in, stirring well to combine everything.

    Pour in 1/4 cup of the reserved pasta water, adjusting as necessary, and allow it to cook for 1 minute while stirring continuously.

    In a large skillet, combine butter and oil over medium heat until the butter has completely melted. Once melted, add the garlic and sauté for an additional 30 seconds.

    Incorporate the shrimp into the skillet, seasoning with 1/8 teaspoon of salt and pepper. Cook for 2 minutes, then flip the shrimp, adding another 1/8 teaspoon of salt and pepper. Continue to cook for an additional 2 to 3 minutes, or until the shrimp turn opaque and are fully cooked.

    Take the skillet off the heat and mix in the red pepper flakes (if using), lemon juice, and parsley. Toss everything together to ensure even distribution.
