Lightly coat the shrimp with oil and sprinkle with garlic and seasoning salt for flavor.
In a small bowl, combine mayonnaise, sour cream, lime juice, and hot sauce. If the mixture is too thick, add a few drops of water to achieve a drizzling consistency; set it aside or pour it into a squeeze bottle for easy application.
For the slaw, mix together cabbage, onion, jalapeño, lime juice, and cilantro in a large bowl; cover and refrigerate to let the flavors meld.
Preheat your air fryer to 360°F. Cook the shrimp for 5 to 6 minutes, shaking the basket halfway through the cooking time until they are fully cooked in the center. If using a skillet, heat it to medium-high and cook the shrimp for 2 to 3 minutes on each side.
Alternatively, if cooking in a skillet: Work in two batches, cooking the shrimp over medium-high heat for approximately 1-2 minutes on each side until they turn opaque and are cooked through.
In the meantime, char the tortillas over an open flame or in a skillet for about 30 seconds, then set them aside.
To assemble: Place 1/4 cup of slaw on each tortilla, add 3 shrimp on top, drizzle with the spicy mayo, and finish with a sprinkle of cilantro for garnish.
