Ingredients

  • 8 oz peeled and deveined jumbo shrimp
  • fresh black pepper
  • 1 tbsp grated parmesan cheese
  • olive oil cooking spray
  • 1 tsp olive oil
  • 2 cloves garlic
  • 1 1/4 cups crushed tomatoes
  • kosher salt and pepper
  • 2 medium zucchini
  • 1 oz shredded mozzarella cheese
  • 1 large egg
  • 3 tbsp whole wheat Italian seasoned breadcrumbs
  • 1 tbsp panko crumbs

    Begin by setting your oven temperature to 450°F. Lightly coat a baking sheet with cooking spray to prevent sticking.

    In one bowl, pour in the beaten egg, and in another bowl, combine the breadcrumbs, panko, and parmesan cheese.

    Rinse and pat dry the shrimp. Season them lightly with black pepper. Working in small batches, dip each shrimp into the egg mixture to coat, then transfer them to the breadcrumb mixture to ensure they are well covered, and arrange them on the prepared baking sheet.

    Generously mist the tops of the shrimp with oil, then place the baking sheet in the center of the oven and bake for approximately 6 to 7 minutes.

    After the initial baking time, flip the shrimp over and continue cooking for an additional 3 minutes or until they are fully cooked through.

    In a large skillet that can go in the oven, heat the oil over medium heat.

    Add the minced garlic and sauté until it turns golden brown, which should take around 2 minutes. Next, incorporate the crushed tomatoes, along with salt and pepper, and let the mixture simmer on low heat for about 5 to 6 minutes.

    Once the shrimp are cooked, introduce the zucchini noodles to the skillet and stir them in, cooking for 1 1/2 to 2 minutes at most to combine with the sauce.

    Arrange the cooked shrimp on top of the zoodles, sprinkle with cheese, and place the skillet under the broiler for 1 minute or until the cheese is melted and bubbly.
