Ingredients

  • 1 tsp olive oil
  • 2 cloves garlic
  • 3/4 cup diced green bell pepper
  • 2 1/2 cups ripe tomatoes
  • 1 tbsp Cajun spice seasoning
  • 3/4 cup onion
  • 4 6 ounce pieces white fish fillets (flounder, fluke, tilapia)

Instructions

    In a large skillet, sauté the onion and garlic in olive oil over medium heat for several minutes until they become tender.

    Incorporate the tomatoes, peppers, and spices into the skillet; mix well and continue to cook until the tomatoes soften, which should take around 2-3 minutes.

    Gently place the fish fillets into the sauce, cover the skillet, and allow to cook on medium-low heat until the fish is easily flaked with a fork, approximately 12-15 minutes.
