Making meatloaf in the skillet is perfect for busy weeknights – it's ready in less than 30 minutes! I took my basic turkey meatloaf recipe, swapped the ketchup for jarred Mina Harrisa (or you can use homemade), added shredded zucchini and made them in the skillet.

Ingredients

  • 1/2 cup grated zucchini
  • 2 tbsp diced red pepper
  • 1/4 cup Harissa
  • 1 large egg
  • 1 tsp sweet paprika
  • 1 tsp kosher salt
  • 1.3 lb 93% lean ground turkey
  • 1 1/2 tbsp Harissa Sauce for topping
  • 1 1/2 tbsp ketchup
  • 2 tbsp onion
  • 3 cloves crushed garlic
  • 1/2 cup whole wheat seasoned breadcrumbs

Instructions

    In a spacious mixing bowl, combine the grated zucchini, diced onion, minced garlic, chopped red pepper, breadcrumbs, 1/4 cup of Harissa, the egg, paprika, and salt.

    Introduce the ground turkey to the mixture and stir until all ingredients are well incorporated.

    Shape the mixture into five evenly sized round patties.

    In a small bowl, blend the remaining 1 1/2 tablespoons of Harissa with the ketchup until smooth.

    Preheat a large skillet over medium heat. Lightly coat with cooking spray and place the patties in the skillet. Cover and cook for approximately 8 to 10 minutes on each side, adjusting the heat if they begin to brown too quickly.

    In the final moments of cooking, generously brush the Harissa-ketchup blend over the tops of the patties.
