Ingredients

  • 3/4 cup part-skim cottage cheese
  • ½ teaspoon kosher salt
  • ½ tablespoon olive oil
  • ½ medium yellow onion
  • 3 cloves garlic
  • 2 ½ cups crushed tomatoes
  • 2 ½ cups chicken bone broth
  • ¼ cup fresh basil
  • 8 ounces pasta
  • ¾ cup part skim shredded mozzarella cheese
  • 2 tablespoons chopped parsley
  • 1/2 pound 93% lean ground beef
  • 1/4 cup grated Parmesan cheese

    In a mixing bowl, blend together the cottage cheese, Parmesan cheese, and 2 tablespoons of chopped parsley until well combined.

    Place a large 12-inch oven-safe nonstick skillet with a lid over high heat. Once hot, add the ground beef and sprinkle in the salt. Cook for about 5 minutes, using a wooden spoon to break it apart, until it is fully browned.

    Pour in the oil, then add the chopped onion and minced garlic. Sauté this mixture for around 4 to 5 minutes, or until the onion is soft and translucent.

    Introduce the tomatoes, bone broth, and basil into the skillet. Stir everything together and bring to a gentle simmer. Then, add the pasta, ensuring it is evenly distributed and submerged in the sauce. Lower the heat to medium, cover the skillet, and let it simmer, stirring occasionally, until the pasta has softened and the sauce has thickened, absorbing most of the liquid—this should take about 18 to 20 minutes.

Finish by garnishing with additional parsley and serve.
