Ingredients

  • 1 garlic clove
  • 1 green onion
  • 1 tbsp minced fresh cilantro
  • 1 tsp minced pickled jalapeño
  • 1/2 cup crumbled queso blanco
  • fresh lime juice
  • salt
  • freshly ground black pepper
  • 1 lb zucchini
  • 1 tbsp extra virgin olive oil
  • 1 large tomato

Instructions

    In a sizeable skillet, heat oil over medium flame and sauté the garlic for 1 minute, stirring continuously until it starts to sizzle.

    Incorporate the zucchini into the skillet, cooking while stirring occasionally for approximately 3 minutes, or until it becomes slightly tender.

    Stir in the diced tomato and chopped green onion, and continue to cook for around 3 minutes.

    Take the skillet off the heat, then mix in the cilantro, jalapeño, and lime juice.
