Ingredients

  • 1 lb 93% lean ground turkey
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 small onion
  • 2 tbsp bell pepper
  • 3/4 cup water
  • 4 oz canned tomato sauce
  • 4 cups uncooked riced cauliflower
  • 4 ounces avocado
  • chopped cilantro
  • 1 cup chopped lettuce
  • 1/4 cup jarred salsa
  • lime wedges
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 1/4 tsp kosher salt

Instructions

  1. 1

In a large skillet, heat over high heat and cook the turkey, breaking it apart into smaller bits as it browns, which should take around 5 minutes.

  2. 2

Once the turkey is no longer pink, stir in 1 teaspoon of salt along with the dry spices, ensuring everything is well combined.

  3. 3

Incorporate the onion, bell pepper, water, and tomato sauce into the skillet, then cover it.

  4. 4

Allow the mixture to simmer on low heat for approximately 15 minutes.

  5. 5

After simmering, remove the lid and fold in the cauliflower, adding 1/4 teaspoon of salt, then cook until the cauliflower is tender, which will take about 8 minutes.

  6. 6

Once done, transfer the mixture to a serving plate and garnish with avocado, lettuce, salsa, and lime.
