In a large pot filled with salted water, cook the pasta and broccoli together following the package instructions for al dente, or reduce the cooking time by 2 minutes for a slightly firmer texture. Prepare a baking dish by coating it with cooking spray.
Set your oven temperature to 375°F and allow it to preheat.
In a spacious, heavy-bottomed skillet, melt the butter over low heat. Add the chopped onion and sauté for around 2 minutes. Then, incorporate the flour and continue cooking for an additional minute, stirring until the flour turns a light golden color and is fully blended. Gradually pour in the milk and chicken broth, whisking continuously. Increase the heat to medium-high and bring the mixture to a boil. Let it simmer for approximately 5 minutes, or until the sauce reaches a smooth and thick consistency. Season with salt and pepper to your liking.
After the sauce has thickened, remove it from the heat, add the cheese, and stir until it melts completely. Taste and adjust the seasoning with more salt and pepper if needed. Fold in the cooked macaroni and broccoli until everything is well combined. Transfer this mixture into the prepared baking dish. Sprinkle grated cheese and breadcrumbs on top, then lightly spray with cooking spray.
Bake in the preheated oven for 15-20 minutes. For a final touch, switch to broil for a couple of minutes to achieve a golden crust on the breadcrumbs.
