Ingredients

  • 12 oz high fiber elbows like Ronzoni Smart Taste
  • 2 cups skim milk
  • 1 cup fat free chicken broth
  • 8 oz 2 cups reduced-fat sharp cheddar (Cabot 50%)
  • salt and fresh pepper to taste
  • 12 oz fresh broccoli florets
  • 2 tbsp grated parmesan
  • 1/4 cup seasoned bread crumbs
  • cooking spray
  • 1/4 cup minced onion
  • 1/4 cup flour
  • 1 1/2 tbsp butter

    In a large pot filled with salted water, cook the pasta and broccoli together following the package instructions for al dente, or reduce the cooking time by 2 minutes for a slightly firmer texture. Prepare a baking dish by coating it with cooking spray.

    Set your oven temperature to 375°F and allow it to preheat.

    In a spacious, heavy-bottomed skillet, melt the butter over low heat. Add the chopped onion and sauté for around 2 minutes. Then, incorporate the flour and continue cooking for an additional minute, stirring until the flour turns a light golden color and is fully blended. Gradually pour in the milk and chicken broth, whisking continuously. Increase the heat to medium-high and bring the mixture to a boil. Let it simmer for approximately 5 minutes, or until the sauce reaches a smooth and thick consistency. Season with salt and pepper to your liking.

    After the sauce has thickened, remove it from the heat, add the cheese, and stir until it melts completely. Taste and adjust the seasoning with more salt and pepper if needed.
