In a small bowl, mix together the oil and minced garlic until well combined.
Set your oven to preheat at 425°F. Prepare a baking sheet by lightly spraying it with cooking spray.
Slice the potato lengthwise into 1/4-inch thick pieces, then cut each piece into 1/4-inch wide strips. Arrange these strips on the prepared baking sheet.
