Ingredients

  • 2 medium potatoes
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/8 tsp cumin
  • coarse salt and fresh cracked pepper
  • 1 slice center cut bacon
  • 1/3 cup sharp shredded cheddar cheese
  • 2 tbsp diced scallions
  • 1 tbsp sliced pickled Jalapeno
  • 1 tsp smoked paprika
  • 1/4 tsp chili powder
  • 2 tsp olive oil

Instructions

  1. 1

Begin by preheating your oven to 450°F. If you wish to simplify clean-up, line a baking sheet with aluminum foil and give it a light spray of cooking spray.

  2. 2

Slice each potato in half lengthwise to create thin strips approximately 1/4 inch thick; then chop each strip into 1/4 inch fries.

  3. 3

In a large mixing bowl, combine the sliced potatoes with oil and toss them thoroughly. Sprinkle in your seasoning mix, including paprika, salt, and pepper, and toss again to ensure the potatoes are evenly coated.

  4. 4

Arrange the seasoned potatoes in a single layer on the baking sheet, placing them in the lower third of the oven. Bake for 10 minutes, then flip the fries and continue baking for an additional 8 to 10 minutes, or until they reach a crisp and golden-brown state.

  5. 5

Once done, take them out of the oven and generously sprinkle with cheddar cheese, sliced jalapeños, chopped scallions, and bacon bits. Place them back in the oven for about 1 to 2 minutes, or until the cheese is melted and bubbly.
