Ingredients

  • 1 ½ pounds boneless, skinless chicken thighs, trimmed of fat
  • 9 ounces chicken Andouille sausage
  • 1 red bell pepper
  • 3 cloves garlic
  • 1 cup low sodium chicken broth
  • 1 14.5-ounce can diced tomatoes
  • 3 ounces 1/2 a 6-ounce can tomato paste
  • 1/2 cup tomato sauce
  • 1 ¾ teaspoons Creole seasoning
  • Dash of cayenne pepper
  • 3 scallions
  • 3 cups cooked brown rice
  • 1 green bell pepper
  • 1 cup chopped onions
  • 1/2 cup chopped carrots

Instructions

    Combine all the ingredients in the slow cooker.

    Secure the lid and set the cooker to low, allowing it to simmer for 6 to 8 hours, or choose high for a cooking time of 3 to 4 hours.
