  • 2 pounds boneless, skinless chicken breasts
  • 2 dry bay leaves
  • 1 teaspoon kosher salt
  • 2 cups chicken broth
  • 1 celery stalk
  • 1 large sprig parsley

    In a slow cooker with a capacity of 6 quarts or more, combine the chicken, chicken stock, chopped celery, fresh parsley, bay leaves, and a pinch of salt. Secure the lid and let it cook until the chicken is tender enough to be easily pulled apart with two forks. This will take approximately 3 to 4 hours on the high setting or 4 to 6 hours on low.
