Smoked Salmon Cucumber Bites

These delightful Smoked Salmon Cucumber Bites are an ideal low-carb starter for your festive gatherings. Each crunchy cucumber vessel is hollowed out and generously packed with a luscious blend of smoked salmon, creamy whipped cheese, zesty red onion, and briny capers—capturing all my favorite bagel toppings, but without the extra carbs!

Ingredients

  • 1/4 cup chopped red onions
  • 1 tablespoon fresh dill
  • 12 ounces nova lox or smoked salmon
  • 3 English cucumbers
  • 3/4 cup whipped cream cheese
  • 2 teaspoons drained capers

Instructions

    In a medium-sized mixing bowl, blend together the red onion, cream cheese, capers, dill, and lox until well combined.

    Remove the skin from the cucumbers in a striped pattern, then cut them into slices that are 1/2 inch thick. Using a melon baller, gently carve out a shallow indentation in the center of each cucumber slice—be careful not to cut all the way through.

    Fill each cucumber cup with approximately 1 tablespoon of the salmon mixture, then arrange them on a serving platter and finish with a sprinkle of fresh dill.

    You can prepare the cucumber cups up to 24 hours prior to serving. Simply store them in an airtight container in the refrigerator until you're ready to enjoy.
