Ingredients

  • 2 ounces uncooked soba noodles
  • 1/2 tablespoon toasted sesame oil
  • ¼ cup chopped bell pepper
  • ¼ cup broccoli florets
  • 1 large pasture-raised egg
  • 1 tablespoon coconut aminos
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon creamy nut butter
  • ½ teaspoon minced garlic
  • ½ teaspoon ground ginger
  • ¼ cup chopped onion

Instructions

    Pour water into a medium-sized pot until it’s half full and bring it to a rolling boil. Introduce the soba noodles and let them cook until they reach a tender consistency, which should take around 4 to 6 minutes.

    Meanwhile, warm the sesame oil in a large frying pan over medium heat.

    Incorporate the garlic, ginger, onion, bell pepper, and broccoli into the skillet. Cover it with a lid and sauté, stirring occasionally, until the vegetables become tender, approximately 3 to 4 minutes.

    Once the soba noodles are cooked, drain them and add them to the skillet with the sautéed vegetables.

    Shift the mixture to one side of the skillet and crack an egg into the empty space. Scramble it by breaking up the yolk and white until fully cooked, then combine it with the noodles and vegetables.
