Ingredients

  • 1/2 tbsp olive oil
  • 6 scallions
  • 1 tsp ground cumin
  • 1 1/2 tsp salt
  • 1 packet sazon or 1 teaspoon ground annatto
  • 8 large chicken drumsticks on the bone
  • 1/2 tsp garlic powder
  • 6 oz light beer
  • 1 cup water
  • salt to taste
  • 1/2 cup cilantro
  • 2 medium tomatoes
  • 1/3 cup diced red bell pepper
  • 4 cloves garlic

    Pour oil into a deep sauté pan and warm it over medium heat.

    Introduce chopped scallions and minced garlic to the pan, cooking for 2 minutes before incorporating diced tomatoes and bell peppers.

    Sprinkle in salt, cumin, and either sazón or annatto; mix well and set the mixture aside.

    Season the chicken pieces with salt and garlic powder; place them in the center of the pan, allowing them to sear and develop a slight golden color on each side.
