Ingredients

  • 1/4 cup low-sodium soy sauce
  • 2 cloves garlic
  • 1 teaspoon fresh grated ginger
  • 1/2 teaspoon kosher salt
  • black pepper
  • 16 ounces trimmed NY strip steak
  • 1 large head broccoli
  • 6 to 8 medium scallions
  • 2 tablespoons rice wine vinegar
  • 1/2 tablespoon sesame oil
  • 1 tablespoon honey

    In a medium-sized mixing bowl, combine the soy sauce, vinegar, honey, sesame oil, minced garlic, grated ginger, and 1/2 teaspoon of kosher salt. Add freshly ground black pepper to taste.

    Split the marinade into two separate medium bowls. Place the beef in one of the bowls and mix well to ensure it's evenly coated. Allow it to marinate for 30 minutes at room temperature, stirring occasionally, or cover it and refrigerate for a maximum of 8 hours.

    While the beef is marinating, break the broccoli into 16 florets, each measuring about 1 to 1 1/2 inches. If any florets are too large, slice them in half and trim their stems as needed.

    If you're using wooden skewers, remember to soak them in water for at least 20 minutes to prevent burning on the grill. Once soaked, drain them before assembling the skewers.

    Once the meat has marinated, start assembling the skewers: First, slide one piece of scallion onto the skewer at a right angle, followed by a broccoli floret, and then a piece of beef. Repeat this pattern with another segment of scallion, broccoli, and beef, finishing with the last piece of scallion. Continue this process until you have created 8 skewers with all the ingredients.

    Generously brush the assembled skewers with the reserved marinade, and sprinkle a touch of salt and black pepper over them.

    For grilling: Preheat your grill to high heat. Cook the skewers until they reach your preferred level of doneness, approximately 3 to 4 minutes on each side for medium-rare, brushing them with the leftover marinade as they cook. Serve immediately.

    For broiling: Set your broiler to high and adjust the rack to about six inches away from the heat source. Line a baking sheet with aluminum foil and arrange the skewers on it. Broil until the meat is cooked to your liking, about 4 minutes per side for medium-rare, while basting with the remaining marinade.
