Fill a large pot with water, add salt, and bring it to a rolling boil.
Generously season the chicken pieces with salt, pepper, oregano, and basil to enhance the flavor.
Place a large skillet over high heat. Once it’s hot, lightly coat it with cooking spray and add the seasoned chicken. Sauté for approximately 3-4 minutes, or until the chicken is cooked through and no longer pink inside.
Take the chicken out of the skillet and set it aside for later.
Add the pasta to the boiling water and cook it according to the instructions on the package. Before draining, make sure to set aside about 1/2 cup of the pasta water.
While the pasta is cooking, pour olive oil into the same skillet and heat it over high heat.
Introduce minced garlic to the skillet and sauté until it turns golden brown, being careful not to let it burn. Next, add the grape tomatoes along with salt and pepper, then reduce the heat to medium-low. Continue to sauté for about 4-5 minutes.
Once the pasta is drained, combine it with the sautéed tomatoes in the skillet and toss everything together. If the dish appears too dry, incorporate some of the reserved pasta water to achieve the desired consistency.
Finally, add the fresh basil and the cooked chicken to the mixture, tossing everything together well. Serve the dish warm, garnished with freshly grated cheese.
