Begin by heating your oven to 300°F (150°C).
Extract the seeds from the pumpkin, ensuring to detach them from the fibrous pulp, then rinse the seeds thoroughly in a colander under cool running water.
Shake off any remaining moisture, then arrange the seeds in a single layer on a baking sheet and roast them for approximately 10 minutes, or until they are dry, giving them a toss halfway through for even roasting.
In a separate small bowl, mix together the onion powder, garlic powder, mustard, smoked paprika, cayenne pepper, salt, and brown sugar.
Transfer the seeds to a medium-sized bowl and lightly mist them with oil.
Sprinkle 3/4 of the spice blend over the seeds and toss them well to ensure they are uniformly coated.
