Ingredients

  • 1 5-ounce can skinless wild pink or red salmon
  • 2 scallions
  • Pinch kosher salt
  • 3/4 cup cooked brown rice
  • ½ cup chopped cucumber
  • Furikake or chopped nori and sesame seeds
  • 2 teaspoons sriracha sauce
  • 1 tablespoons light mayonnaise

Instructions

    In a mixing bowl, blend together the canned salmon, mayonnaise, sriracha, the white parts of the scallions, and a small dash of salt until thoroughly combined.

    In your serving bowl, place the cooked rice as the base.

    Layer the salmon mixture on top, then add diced cucumber, a sprinkle of furikake, and the green parts of the scallions. Feel free to drizzle extra sriracha on top if you like it spicier.
