Begin by heating your oven to 425°F.
In a sizable mixing bowl, combine the sausage, Brussels sprouts, butternut squash, thyme, olive oil, and 3/4 teaspoon of salt and pepper.
Prepare the foil packets. Cut two sheets of heavy-duty or non-stick aluminum foil, each measuring 18 inches in length.
Evenly distribute the sausage and vegetable mixture, approximately 2 cups each, into four separate foil packets.
Fold up the longer sides of the foil to meet at the center over the ingredients.
Create a double fold at the ends, ensuring there is space for steam to circulate within. Then, double fold the two shorter ends to securely seal the packet, preventing any steam from escaping.
