  • 3 cups 2% milk
  • 3 lbs frozen chopped spinach
  • 3/4 cup Parmesan cheese
  • 1 tbsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup Gruyere cheese
  • 1/4 tsp fresh grated nutmeg
  • 1 cup finely chopped onion
  • 1/4 cup all purpose flour

    Begin by heating your oven to 425°F (220°C).

    In a sturdy saucepan, melt the butter over medium heat. Once melted, toss in the onions and cook them until they become translucent, which should take around 10 to 12 minutes.

    Incorporate the flour and nutmeg into the mixture; let it cook for an additional 2 minutes, stirring occasionally to avoid sticking.

    Gradually pour in the milk and continue to cook the mixture until it reaches a thick consistency, roughly 5 to 7 minutes.
