  • 2 cups homemade marinara sauce
  • 15 oz part skim ricotta cheese
  • 1 large egg
  • kosher salt and fresh pepper
  • 9 tbsp about 3 oz part skim mozzarella cheese, shredded
  • 10 oz package frozen chopped spinach
  • 9 uncooked lasagna noodles
  • 1/2 cup grated Parmesan cheese

    Begin by setting your oven temperature to 350°F. Pour approximately 1 cup of sauce into the bottom of a 9 x 12 inch baking dish, spreading it out evenly.

    Prepare the lasagna noodles according to the instructions on the package, then drain them thoroughly.

    In a medium mixing bowl, combine the spinach, ricotta cheese, Parmesan cheese, egg, 1/2 teaspoon of salt, and black pepper. Stir the mixture until well blended.

    Lay a piece of wax paper on your countertop and arrange the cooked lasagna noodles on it, ensuring they are dry. Take 1/3 cup of the ricotta mixture and spread it evenly across each noodle. Carefully roll the noodle up and place it seam side down in the prepared baking dish. Continue this process with the remaining noodles.
