Using the chipper blade on your Paderno spiralizer, transform the cucumbers into spiral strands.
Chop the spirals into shorter segments, approximately 5-6 inches in length for easier consumption. If a spiralizer isn’t available, simply dice the cucumbers into small cubes with a knife.
In a large mixing bowl, combine the spiralized cucumbers with the bell pepper, tomatoes, olives, and red onion.
Squeeze the juice from half a lemon over the mixture, drizzle with half of the olive oil, and add fresh oregano, salt, and pepper before tossing everything together.
Transfer the salad to a serving plate, place a slice of feta on top, and drizzle with the remaining olive oil to finish.
