Ingredients

  • 16.5 oz package yellow cake mix
  • 1 cup water
  • 2 large egg whites
  • 1 tsp vanilla extract
  • baking spray
  • 48 oz Wilton blue chocolate candy melts
  • m&m's minis
  • 48 mini marshmallows
  • 48 lollipop sticks
  • styrofoam block
  • 6 oz plain fat-free Greek yogurt

Instructions

    Begin by setting your oven temperature to 350°F. Lightly coat your cake pop pan with non-stick baking spray.

    In a spacious mixing bowl, combine all the ingredients for the cake and mix thoroughly until well blended.

    Transfer the batter into a piping bag or a large ziplock bag, making sure to snip off the corner.

    Fill the prepared cake pop pan with the batter by piping it in, then bake for approximately 18 minutes (I recommend rotating the pan after 10 minutes to ensure even baking). Allow the pan to cool for 5 minutes before opening it.

    Once baked, transfer the cake balls to a wire rack and continue with the remaining batter.

    Trim off the seams of the cake balls using a pair of scissors. Place the cake balls in the refrigerator for about 45 minutes; this step will help the chocolate adhere better to the cake.

    Melt a portion of the chocolate in the microwave following the package instructions, being cautious not to overheat it.

    Dip the tip of each stick into the melted chocolate, then insert it into the cake ball (this will secure the stick).

    In small batches, melt the remaining chocolate.

    Dip the cake pops into the melted chocolate, allowing any excess to drip off. Place the stick into a styrofoam block for about a minute, and swiftly add M&Ms and marshmallows to create a rainbow effect.
