Ingredients

  • 1 1/4 pounds beef
  • fresh ground pepper
  • 6 bamboo skewers
  • 2 packed tbsp parsley
  • 2 packed tbsp chopped cilantro
  • 2 tbsp red onion
  • 1 clove garlic
  • 2 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp water
  • 1/4 tsp kosher salt
  • 1/8 tsp fresh black pepper
  • 1/8 tsp crushed red pepper flakes
  • 1 1/4 tsp kosher salt
  • 1 large red onion
  • 18 cherry tomatoes

Instructions

    Sprinkle the meat generously with salt and pepper to enhance its flavor.

    To create the chimichurri, mix together the diced red onion, vinegar, salt, and olive oil. Allow this mixture to rest for approximately 5 minutes. Then, incorporate the remaining ingredients and blend well; refrigerate until it’s time to serve (this can be prepared a few hours in advance).

    Skewer the beef along with the onions and tomatoes onto the skewers.

    Heat the grill to high. Cook the kebabs for about 2 to 3 minutes on each side, or until they reach your preferred level of doneness, aiming for medium-rare. Once cooked, transfer the kebabs to a serving platter and generously drizzle with the chimichurri sauce.
