Ingredients

  • 1 tsp garlic salt
  • 1/4 cup Sweet Red Chili Sauce
  • 1 tbsp honey
  • 1/2 tsp Sriracha sauce
  • 1 large ripe mango
  • 1-2 tbsp chopped fresh cilantro
  • 1 small clove garlic
  • 1 tbsp minced jalepeño
  • 2 tbsp fresh lime juice
  • 1/2 tsp ground ginger
  • 1 lb pork tenderloin

    To prepare the salsa: In a mixing bowl, combine all the ingredients and adjust the flavor with salt and pepper as desired.

    Chill the salsa in the refrigerator until you are ready to serve it. This recipe yields 1 cup.

    Preheat your oven to 375°F. In a small bowl, blend together garlic salt and ginger. Apply this mixture evenly over the pork tenderloin. Position the pork on a rack within a roasting pan that has been lined with foil.

(Current guidelines suggest cooking pork to an internal temperature of 145°F for medium-rare; if you prefer it well done, aim for an internal temperature of 160°F using a meat thermometer.)
