Ingredients

  • 1.5 lbs 24 oz swordfish steaks, skin removed
  • 3 tbsp chopped chives
  • salt and fresh pepper
  • oil spray
  • lemon zest
  • mixed greens or chopped romaine
  • 1 lemon
  • 8 tsp extra virgin olive oil
  • salt and fresh pepper
  • 2 garlic cloves
  • 1 shallot
  • 1/4 cup breadcrumbs

Instructions

    Chop the swordfish into sizable pieces and transfer approximately a quarter of it into a food processor along with the garlic and shallots.

    Blend the mixture until it reaches a nearly smooth, paste-like consistency.

    Transfer this mixture into a medium-sized bowl.

    Add the remaining chunks of fish to the food processor and pulse intermittently until they are finely chopped.

    Mix the chopped fish with the initial paste in the bowl, then incorporate chives, lemon zest, breadcrumbs, salt, and pepper.

    Thoroughly combine all the ingredients and shape them into four equal patties.

    In a large non-stick frying pan, lightly coat the surface with cooking spray and heat it over medium-high heat.
