Ingredients

  • 1 1/4 lbs boneless
  • 2 tbsp light soy sauce
  • 2 teaspoons vegetable or canola oil
  • 3 cups fresh Thai or regular basil leaves
  • cooked jasmine rice
  • 2 tbsp oyster sauce
  • 5 cloves garlic
  • 1 serrano chile

Instructions

  1. 1

In a mixing bowl, combine the chicken with oyster sauce and soy sauce, allowing it to marinate for 10 minutes.

  2. 2

Preheat a large nonstick skillet or wok over medium-high heat. Once it reaches the desired temperature, pour in the oil, then add the garlic and chili, sautéing until aromatic, which should take about 30 seconds.

  3. 3

Raise the heat to high and incorporate the chicken, stirring frequently until it is fully cooked, approximately 4 minutes. Toss in the basil and cook until it is wilted, about 1 minute.

  4. 4

Plate the chicken mixture over a bed of rice for serving.
