Begin by preheating a large nonstick wok on high heat.
In the meantime, lightly sprinkle your chicken or preferred protein with salt and pepper for seasoning.
Once the wok is thoroughly heated, pour in 2 teaspoons of oil. When the oil is shimmering, add the chicken and sauté on high heat until it is evenly browned and fully cooked, which should take about 3 to 4 minutes. Remove from the wok and set aside.
Lower the heat slightly, then introduce the eggs and egg whites into the wok along with a pinch of salt. Cook for 1 to 2 minutes, stirring until the eggs are scrambled. Set aside once done.
Pour in the remaining oil, then add the onion, scallions, and garlic to the wok. Sauté for about 1 minute, then if desired, toss in the chili pepper, followed by the tomatoes, and mix in all the rice.
Drizzle in the soy sauce and fish sauce, stirring to combine all the ingredients, and continue to cook for 2 to 3 minutes while stirring.
Return the scrambled eggs and chicken to the wok. Adjust the soy sauce and salt to your taste, and stir everything together for an additional 30 seconds.
