In a spacious nonstick skillet or wok, warm the oil over medium-high heat. Incorporate the white parts of the scallions along with the green curry paste, and sauté for 1 minute.
Introduce the shrimp and minced garlic to the skillet, seasoning with salt, and cook for approximately 2-3 minutes.
Pour in the coconut milk and fish sauce, stirring to combine; let it simmer for around 2-3 minutes, or until the shrimp is fully cooked.
Take off the heat, and fold in the green parts of the scallions and fresh basil. Serve it over basmati rice or cauliflower rice, and savor the flavors!
