Ingredients

  • 5 large or 8 cups medium ripe red heirloom or beefsteak tomatoes
  • 1/2 cup red onion
  • Kosher salt and fresh ground pepper to taste
  • good crusty bread
  • 1 clove garlic
  • 8 - 10 fresh basil leaves
  • 1 tablespoon extra virgin olive oil

Instructions

    In a spacious mixing bowl, mix together the tomatoes, red onion, fresh basil, olive oil, minced garlic, and generously season with salt and pepper to taste.

    Allow the tomato blend to rest at room temperature for approximately 20 minutes, enabling the flavors to meld together (the tomatoes will release their juices, forming a natural dressing). Give it a good toss.
