Ingredients

  • 1 tsp red wine vinegar
  • 2 ripe tomatoes
  • 4 slices Cheddar cheese
  • 2 tbsp light mayo
  • 3 tbsp finely chopped celery
  • 1 tbsp finely chopped red onion

Instructions

    Set your broiler to high heat and position the oven rack so it’s the second one from the top. Place the tomatoes on a baking sheet and sprinkle them with salt and pepper to taste.

    In a small mixing bowl, blend together the ingredients for the tuna salad.

    Spoon 1/4 cup of the tuna salad onto each tomato and lay a slice of cheese on top. Broil the tomatoes until the cheese is bubbly and melted, which should take approximately 1 to 2 minutes. Take them out of the oven and enjoy right away.
