  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Olive oil spray
  • 1/2 lime
  • 1/2 cup jarred salsa
  • chopped fresh cilantro
  • 2 tablespoons all-purpose flour
  • 1 large egg
  • 3 1/2 ounces crushed tortilla chips*

    Season the chicken tenders with 3/4 teaspoon of salt. On a shallow plate, spread out the flour, and in a medium bowl, crack the egg. On another shallow plate, combine the tortilla chips, the remaining 1/4 teaspoon of salt, garlic powder, cumin, and pepper.

    Coat each chicken tender in flour, then dip it into the egg (ensuring to let any excess egg drip off), and finally, roll it in the chip mixture. Lightly mist a baking sheet with olive oil, arrange the tenders on the sheet, and give the tops a gentle spray with olive oil. Bake for approximately 8 to 10 minutes on each side or until they are thoroughly cooked.
