Begin by setting your oven to preheat at 425°F.
Lightly coat a 10-inch cast-iron skillet with cooking spray and heat it over medium-high heat. Once the skillet is hot, place a tortilla into the pan. Lower the heat to medium and allow it to cook for 1 minute.
Carefully flip the tortilla and continue cooking for another minute, during which you’ll spread 2 tablespoons of sauce evenly over the surface, reaching all the way to the edges.
Remove the skillet from the heat and sprinkle cheese or your preferred toppings on top, saving any fresh herbs for the final touch.
Place the skillet in the preheated oven and bake for 2 to 4 minutes, or until the tortilla edges turn a lovely golden brown, making sure they don’t burn (if you’re omitting cheese, keep an eye on it as it may cook faster).
Once baked, take the skillet out and return it to the stove, cooking for an additional 1 to 2 minutes over medium heat until the bottom is nicely browned, avoiding any burning.
Slide the pizza onto a plate and allow it to cool for a moment. If using, sprinkle fresh herbs on top.
Repeat the process for the second pizza and serve immediately.
