
Tuna Croquettes are an economical dish that utilizes canned tuna, a common pantry item, along with potato and a hint of dill. These flavorful bites are coated in breadcrumbs and can be easily prepared in either the oven or an air fryer for a crispy finish.

In a small saucepan, add the potatoes and cover them with water. Bring to a medium-high boil and cook until the potatoes are soft, which should take around 15 to 18 minutes. Once cooked, drain the water.
In a large mixing bowl, mash the drained potatoes. Then, mix in the tuna, dill, mayonnaise, diced red onion, Dijon mustard, lemon juice, along with salt and black pepper. Place this mixture in the freezer for 10 minutes to firm up.
Take about 1/4 cup of the mixture in your hands and gently shape it into 8 cylindrical logs.
In a small bowl, beat an egg, and in a separate bowl, place the breadcrumbs.
Take each croquette, dip it into the beaten egg, and then coat it with the panko breadcrumbs. Arrange them on a cutting board and lightly mist both sides with olive oil.
Preheat the air fryer to 350°F and cook the croquettes for 10 minutes, flipping them halfway through to achieve a golden and crispy exterior.
Alternatively, preheat your oven to 375°F and bake the croquettes for 22 to 24 minutes, turning them halfway through until they are golden and crispy.
Serve the croquettes with fresh lemon wedges on the side.
