  • 4 large leaves Butter or Bibb Lettuce
  • 4 oz good quality tuna in olive oil
  • 2 thinly sliced red onion
  • 2 tablespoon Avocado Yogurt Dressing
  • 1/2 cup 2% Greek yogurt
  • 1/4 small avocado
  • 3 tbsp fresh chopped cilantro
  • 1/2 jalapeno pepper
  • 1 clove garlic
  • Juice from 1/4 lime
  • 1/8 tsp kosher salt
  • freshly ground pepper
  • 1 tablespoon water
  • 1 heart of palm
  • 1/4 cup cherry tomatoes
  • 1/4 cup shredded or grated carrot

Instructions

    Combine all the components in a compact blender and process until you achieve a silky consistency. Should the dressing appear overly thick, incorporate additional water gradually until the desired texture is reached.
