Ingredients

  • 6 oz grated zucchini
  • 1 lb 93% lean ground turkey
  • oil spray
  • 1 tbsp grated red onion
  • 1/4 cup seasoned whole wheat or gluten-free breadcrumbs
  • 1 clove garlic
  • 1 tsp kosher salt and fresh pepper

Instructions

  1. 1

Thoroughly press out all excess moisture from the zucchini using paper towels. In a spacious mixing bowl, combine the ground turkey, zucchini, breadcrumbs, minced garlic, chopped onion, salt, and pepper. Form the mixture into five equal patties, each weighing 4 ounces, ensuring they are not too thick for even cooking.

  2. 2

STOVE: Place a large nonstick skillet over high heat. Once the skillet is hot, apply a light spray of oil. Carefully add the patties to the pan, then lower the heat to a simmer. Cook on one side until a nice brown crust forms, then flip the patties. Continue to flip occasionally to prevent burning and ensure they are fully cooked through.

  3. 3

If you prefer grilling: Make sure to thoroughly clean the grill before use and apply a light coat of oil spray to avoid sticking. Grill the patties over medium heat for approximately 5 minutes per side, or until the center is no longer pink.

  4. 4

Make sure to press out all the excess moisture from the zucchini with paper towels.

  5. 5

In a large bowl, mix together the ground turkey, zucchini, breadcrumbs, garlic, onion, salt, and pepper. Shape the mixture into five equal patties, each weighing 4 ounces and approximately ½ inch thick.

  6. 6

Preheat your air fryer to 370°F.

  7. 7

Arrange the patties in a single layer and cook in two batches for 10 minutes, flipping them halfway through, until they are browned and cooked through in the center.
