Ingredients

  • 5 cups turkey stock
  • 2 teaspoons kosher salt
  • black pepper
  • 2/3 cup all purpose flour
  • All the pan drippings from roasted turkey
  • 1 teaspoon Bells seasoning
  • few sprigs fresh sage
  • few sprigs fresh thyme

    In a medium to large saucepan, bring 4 cups of turkey stock to a gentle simmer. Incorporate a few sprigs of fresh sage and thyme, along with 2 teaspoons of salt (reduce this amount if your stock is already seasoned, particularly if it’s homemade without added salt) and black pepper to your liking. Allow this mixture to simmer for 15 minutes, then remove and discard the herbs.

    When the stock is ready, combine the remaining 1 cup of cold broth with 2/3 cup of flour and the Bell’s poultry seasoning in a blender. Blend the mixture until it reaches a smooth consistency.

    Carefully pour 2 cups of the bubbling turkey stock into the blender to temper the mixture, then blend once more to combine thoroughly. Transfer this blended mixture into the pot containing the simmering stock.

    At this stage, incorporate the turkey drippings from the roasting pan and continue to simmer. Whisk the gravy over low heat until it thickens, which should take about 5 to 10 minutes. Taste the gravy and adjust the salt if necessary.
