In a large sauté pan, cook the ground turkey over medium heat, seasoning it with salt and pepper. Use a wooden spoon to crumble the meat into smaller pieces as it browns.
While the turkey is cooking, prepare the sofrito by finely chopping the onion, garlic, bell pepper, tomato, and cilantro. (I prefer to use my mini chopper for a quick process.)
Stir the sofrito into the turkey mixture and allow it to cook together on low heat.
Incorporate the olives along with approximately 2 tablespoons of their brine (this enhances the flavor), cumin, bay leaves, and additional salt if desired.
Pour in the tomato sauce and add 1/4 cup of water, stirring everything together thoroughly.
Lower the heat to a simmer, cover the pan, and let it cook for about 15 to 20 minutes for the flavors to combine beautifully.
